We buy green coffee already decaffeinated, ready to be roasted. We don&#039;t do our own decaffeination. Coffees for organic certification use the water process (chemical-free) and are done in Cordoba, Mexico and Vancouver, Canada. Coffees that are not organic certified are processed in Germany with methylene chloride. The facility we buy from reclaims the methylene chloride with a proprietary process and reclaims 98.9% of the chemical they use.
